Salt and pepper salmon with lime butter
3 November 2014
Whether it’s a quick dinner on a warm night, or a get-together with family and friends, there’s no denying that you will take any chance possible to cook on your Observatory Living firepits. Here is our classic summer crown pleaser.
5 tablespoons unsalted butter
2 tablespoons key lime juice
Salt and freshly ground black pepper
4 salmon fillets
1 asparagus bunch
Prepare grill by lightly oiling grill grate over medium-high heat.
In a small saucepan, melt butter and add lime juice. Salt and pepper the salmon fillets modestly on both sides. Place fillets onto grill and brush half of lime butter over salmon. Grill salmon for 2 to 3 minutes per side for medium-rare.
Drizzle remaining lime butter over the salmon before serving. Serve with a side of in season asparagus to perfectly accompany the dish.
Fresh Salmon should glisten, not look dull. Your salmon should look bright and shiny. Its flesh should be firm, clean, and evenly colored. Natural white marbling on the fish is an indicator of good omega-3 fatty acids.
